Books, Books, and More Books

So I easily surpassed my goal of reading one book a month. I've actually turned into quite the bookworm. Here is what I've read recently:
A little far fetched but still a good read.
I have yet to read a book of his that I did not like. 
Silly but good.
I can't wait for the movie!
So bad but so good. 
Completely different from what I normally read. It definitely makes you think.

What I Baked on Sunday

Kale Edition 

I have been eating an excessive amount of kale recently and thought I would share some of my favorite recipes.

Style Syllabus's Kale Salad


This salad is super easy to make and rather tasty. It took some serious willpower to wait for the kale to marinate before diving in.

I love all types of pesto, so I knew I had to try this one. I was a little hesitant since I don't own a food processor but it turned out just fine in the blender. Even my roommates raved over this one.

I pinned this recipe a while ago but never got around to making it. Last night when I was babysitting, the only thing in the fridge was tortillas, black beans, and kale. Remembering this recipe, I put it all together and it was quite tasty. I made Kate's recipe today to have for lunch this week.

Weekend Recap

On Saturday, I had my first Junior League commitment, a meet and greet luncheon for the new class. I had to take an appetizer, so I made IGE's Greek Dip Platter. It is a delicious, quick, and easy recipe.

I left out the parsley and topped it with Zoe's Spice of Life instead. I ended up having tons left over and it was just as good the next day.

Saturday night, we celebrated the end of an era as three friends prepare to leave DC.

What I Baked on Sunday

It's been a while since I've shared any recipes. Here are a few that I've made recently.

Zucchini Boats

Pretty straightforward: zucchini, tomatoes, olive oil, salt and pepper, cheese/bread crumbs, and basil.

Cookie + Kate's Mediterranean Pasta Salad 


This is the perfect summer dish, complete with lots of fresh veggies and whole grains. I left out the chickpeas and can't tell a difference.

These cookies contain all of my favorites: chocolate chips, oats, and peanut butter. Baker beware: the dough is delicious and doesn't contain eggs so it can be eaten without fear of salmonella. It may or may not have been my dinner that night. Enjoy!
