Weekend Recap

On Friday morning, I headed to Charleston to celebrate Lash's graduation from Medical School. I missed the ceremonies but met up with everyone for a picnic lunch. After lunch, we headed downtown to get settled in. 
We stayed at a friend's condo right off of King Street and took full advantage of the rooftop throughout the weekend.
Everyone came over for a drink before dinner including Lash's family. It has been a long time since the five of us were all together.
Not long after, we headed to Fulton Five for dinner. Since we had a large crowd (11 people to be exact), they seated us in a private room upstairs and used a pre-set menu. I started with the antipasto spoleto - mozzarella and tomato wrapped in romaine and grilled prosciutto with cauliflower puree and basil balsamic dressing. Hands down it was one of the best things I have ever eaten. I ordered the shrimp and pasta as my main dish and had a few bites of the scallops and grouper. I would highly recommend going there if you are ever celebrating a special occasion in Charleston.

Saturday morning mom and I got up to go for a walk. We walked out of our bedrooms and realized we were matching. Like mother like daughter. 
After walking the battery, we returned to ML and Lash's to help them pack. Even though they are staying in Charleston for Lash's residency they are moving to a house. On to the next chapter!
Saturday night, we made a homemade pizza before watching the sunset from the rooftop. Sunday morning, we repeated Saturday with another walk and more packing. It was a great weekend overall and I am so excited for Lash to officially be a doctor!

Food – Pasta. I would eat pasta at every meal if I could. 
Smell – I'm not big into strong smells. I love the smell of my new candle and anything being sauteed in the kitchen.

Time of day – Early mornings. It sets the tone for the rest of the day. I love having my quiet time and then playing music while getting ready.

Weekend Recap

Friday was the Spartanburg Regional Bike Race downtown as part of Spring Fling. It is a closed-circuit, multi-lap cycling race that goes right down Main Street. They cleared the street the night before and set up tents all along the sidewalk. Living downtown, we were right in the middle of the action. 
If you look closely, you can see my apartment.
Everyone started tailgating early in the afternoon. I split my time between the Junior League tent and the Wofford tent. The weather was great and it was so fun to have everyone together.
My crowning achievement of the evening was winning my first dart game. Becca and I took on Sara and Palmer and we somehow pulled out a win.
Saturday, I had a Junior League Leadership Retreat for most of the day. To kick off the meeting, we did an icebreaker that involved M&Ms. It was a neat idea and one that I would like to use in the future. Overall, it was a great meeting and I am excited about the plans for this year.
That night, we walked down to hear Joe Nichols play as part of Spring Fling. Sunday, I went to the barn before swapping out my winter and summer clothes. I had been putting it off but am glad that I did since the highs have been in the 90s this week. Hello summer!

Fun Facts Friday

1) We made it to May! Yesterday was a big day in the admission world since deposits were due. Thankfully, we have had a great recruiting year. 

2) I want to be Emma Stone or at least be best friends with her. Have you seen this video?

3) Earlier this week we were talking about college and what we were like back then (Can I even say back then?). It was entertaining to see what my coworkers thought I was like. Ashley decided that this song summed me up perfectly. 


4) Our softball season came to an end last night. I played the game of my life on Wednesday night and should have stopped while I was ahead. Maybe next year we will actually win a game. 

5) I am obsessed with this picture of Baby George. How adorable is he?

6) Speaking of babies, I attended my first baby shower this week. On the one hand, I am surprised I've never been to one before. On the other hand, I am not quite ready for my friends to be in this stage of life.

7) For the shower, I made a pink drink with Sprite and frozen raspberry lemonade. I also picked up the cutest yellow eyelet dress. The mom-to-be said she loved it and was so happy it wasn't pink!

8) I loved Christina's post of 10 Foods that Taste Better than Skinny Feels. I would add pasta, spinach dip, pimento cheese, and pita chips to that list.

9) This weekend is a big weekend in Spartanburg with the Bike Race and Spring Fling. Nothing like walking out your front door to a row of tents and barricades this morning.

What I Baked on Sunday

Baked Broccoli Parmesan Dip

I stumbled across this recipe for Baked Broccoli Parmesan Dip about an hour before Colleen was coming over for dinner last weekend. I didn't have all the ingredients but figured I could sub them for what I had in the fridge. The result was a delicious, cheesy dip that I will have to start making more often.

Ingredients
       (Adapted from Damn Delicious.)
Olive oil
1/8 cup Panko
2 cups fresh broccoli florets, chopped
3/4 cup shredded cheddar cheese, divided
1 cup plain greek yogurt
1/4 cup grated Parmesan
1 tbsp creole seasoning
1/2 tsp garlic powder
1/2 tsp onion powder

Directions
  • Preheat oven to 375*. Grease a small baking dish with nonstick spray. 
  • Heat olive oil in a large skillet over medium high heat. Add Panko and toast until browned, about 3 minutes. 
  • Combine broccoli, 1/2 cup cheddar cheese, yogurt, Parmesan, and seasonings in a large bowl. Season with salt and pepper. 
  • Spread mixture into prepared dish and top with remaining cheddar cheese. Bake until warm and bubbly, about 20-25 minutes. 
  • Sprinkle with toasted Panko and serve immediately with your favorite bread, crackers, or chips.

Weekend Recap

Friday was a big day on campus as our 11th president was inaugurated. The office closed for a few hours so that we could all attend the ceremony followed by a picnic lunch. Thankfully the rain stayed away. 
Friday night, there was a campus wide party to celebrate. I had the best time with these ladies.
We sipped on the "Boss's Brew Terrier Ale: A Liberal Arts Libation" and danced the night away.
Saturday was my last event of the spring semester. I could not have asked for prettier weather. The event ended at the baseball game and I enjoyed watching the Terriers play.
That night, we decided to grill out at Ashley's house. Sara and I wanted to take something sweet, so we threw together a no bake lemon pie. You can't beat this recipe, it's only 3 ingredients, comes together in no time, and freezes well.

Sunday, I spent the day at the barn before re-reading Insurgent. I can't wait to start Allegiant tonight.

The Friday Five

1. Reading:
I download this as an audio book on a whim and ended up finishing it within 3 days. I was hooked!

2. Eating:
This things are delicious. Ash and I picked them up during out last Costco trip. They kind of remind me of the natural white cheddar cheese puffs I used to eat in high school.

3. Listening to:
Nico and Vinz "Am I Wrong." This song came on the other day when I was working out. I may have stopped in the middle of my workout to find out who sang it.

A complete meal in one.

5. Things making me laugh:
I want to be friends with these two.
