Lately

This post is long overdue, so I will try not to overwhelm you and only hit the high notes.
We had a cousins beach weekend back in August. It was the first time we planned a getaway without any of the aunts or uncles. It's crazy to think that we have reached the age where we can do that - but with three babies under two and three dogs I guess it is safe to say that we are now officially grown up.
I accepted the position of Director of Student Activities in Student Affairs. On September 8th, I officially moved across campus. I am loving my new role and working with the students to plan events. My office is a work in progress but I will make sure to do a reveal post once everything is set up.
Some big names on campus, including our president and athletic director, participated in the ice bucket challenge. These photos were too good not to share.
I spent Labor Day weekend with these two crazy people at one of my favorite places, Litchfield Beach.
I celebrated the marriage of these two with this guy and can now cross going on a blind date off my bucket list.
I asked Ashley to create this for my new office and it turned out better than I could have imagined. This is one of my all time favorite verses. Firm and secure.
We celebrated Mom's birthday as a family, minus one. 
May Lo and I started the Whole30.
And these are just a few things that have been happening lately!

Fun Facts Friday

1. Hi friends! Long time no chat. Sorry for being so mia, things have been a little crazy. I'm working on a Lately post to fill you in but figured I would stop in for some fun facts in the meantime. 

2. This week I have misplaced both my Starbucks gold card and my black pencil skirt. I used my card before going to the beach but haven't worn my skirt in while. I realize these are both first world problems but for someone who rarely misplaces things this has thrown me for a loop. 

3. I had a Junior League meeting Monday and one of my committee members asked if I could bring a corkscrew for the wine. I was at happy hour so I responded that I may have one in my car, if not I would pick one up. It did not occur to me until later that it probably isn't normal for people to have them in their cars. I wasn't a girl scout but I always like to be prepared. 

4. It's hard to believe it is already September. I certainly soaked up as much beach time as I could this summer. My sister is jealous of my tan.

5. I'm loving Taylor Swift's new song. It took me a few times to fall in love with it but it is the perfect song for a kitchen dance party. 

6. Speaking of T. Swift, I have also been listening to her Grammy performance of "All Too Well" on repeat. I love the live version more than the one on the cd. 

7. On Monday, I am starting a new job. I will still be at Wofford but I am moving across campus. I'm super excited about it!

8. Part of my new job is teaching the freshman in conjunction with their PE classes. Yesterday, I was running late for class, slipped on the wet floor, and totally busted it in front of a group of students. Once I recovered and made it halfway down the hall, I realized that those students were my class. Talk about a great first impression. 

9. I have more fun wedding plans this weekend. I may not be crashing this one but I'm definitely going out on a limb.

Fun Facts Friday

1. I have been loving the cooler weather this week! It makes me ready for fall, which will be here before we know it. Bring on the sweaters, jeans, and boots.

2. I am getting my hair cut on Monday and can't decide if I want to chop it off or only get a trim. Decisions, decisions.

3. How have I never heard of these Talenti gelato pops? I almost grabbed some at the grocery story yesterday but I know they would not last long in my freezer.

4. Sara and I were recruited to play kickball on Wednesday night. I will say it made me re-evaluate my fitness level. I need to add sprints into my workout routine. Thankfully this team is more into drinking beer and having fun instead of being super competitive.

5. May Lo sent me this ghost vs. goodbye graphic the other day. I definitely lean more towards ghosting than saying goodbye.
6. How great are these coupons? I'm tempted to order them.

7. Last night I stayed up way too late finishing Where She Went, the sequel to If I Stay. Now I just need to find someone to go see the movie with me.

8. Sara has started watching Scandal, which means I have started re-watching it. Even though I've seen all the episodes, I keep getting sucked back in.

9. I ordered a new pair of glasses and am so excited for them to arrive. Now that my prescription is up to date, I will be wearing them more often.

What I Baked on Sunday

or Monday....

Copycat Red Lobster Biscuits 
We started a tradition of Monday night dinners during the Bachelorette. Even though the season has ended, I'm hopeful that our dinners will continue. Last night I pulled out a frozen million dollar spaghetti and made copycat Red Lobster Biscuits at the request of some of the guys. We had a delicious spread complete with salad, another pasta dish, sauteed zucchini, and chocolate chip cookies. I was a little hesitant to make these but they were very easy and turned out well - there was only one left!

Ingredients 
        (Recipe from Damn Delicious)
2 cups all-purpose flour
1 tbsp sugar
1 tbsp baking powder
1 tsp garlic powder
1/2 tsp kosher salt
1/4 tsp cayenne pepper
1 cup buttermilk
1/2 cup unsalted butter, melted
1 1/2 cups shredded sharp cheddar cheese

For the topping:
Whisk 3 tbsp melted unsalted butter with 1/2 tsp garlic powder.

Directions

  • Preheat oven to 450 degrees. Line a baking sheet with parchment paper and set aside. 
  • In a large bowl, combine the first six ingredients. 
  • In a separate bowl, whisk together the buttermilk and melted butter. Pour mixture into the dry ingredients and stir using a rubber spatula until moist. Fold in the cheese. 
  • Using a 1/4 measuring cup, scoop the batter evenly onto the prepared baking sheet. 
  • Bake for 10-12 minutes or until golden brown. 
  • Remove from the oven and brush the tops of each biscuit with the butter mixture.
  • Serve immediately.

Night in Greenville

Friday after work, Ashley and I headed to Greenville for a girls' night. Our first stop was Anthropologie. I'd been in there earlier in the week and had my eye on a few things.  
I found a dress for an upcoming wedding and ordered these shorts. I've been wanting a pair of black lace shorts ever since Etcetera carried them a few seasons ago. 
I have been on a big candle kick lately and also picked up this candle. I love the Oasis Blossom scent and it is not too strong.
After Anthro, we headed to Hand Picked to browse. This purse caught my eye but I decided to pass on it. I do love the turquoise and tortoise combination though. 
For dinner we went to Saffron. I've had Indian food on the brain since we read The Hundred Foot Journey and was glad to satisfy my craving. We split the Chicken Tikka Masala, Lamb Rogan Josh, and Garlic Naan. It was so good and I will definitely go back.
After dinner, we swung by Trader Joe's. I miss having one in walking distance from my house like I did in DC.
I stocked up on some staples including these Sweet and Spicy Pecans. May Lo introduced them to me and they are great for snacking and adding to salads.
It was the best night!
